On a sunny day in mid-September, I went to the highly rated “Teuchisoba no Taguto” soba restaurant near Hassamu Minami Station in Sapporo. I arrived at the restaurant just after 10:30 AM and was shown to the counter as soon as it opened.
Here, I would like to introduce the food and my impressions of this restaurant, “Teuchisoba no Taguto.”

9月半ばのある晴れた日、札幌の発寒南駅近くにある評価が非常に高いこのお店「手打蕎麦のたぐと」へ行きました。レストランには午前10時半過ぎに到着し、開店と同時にカウンターに案内されました。
ここに、このレストラン「手打蕎麦のたぐと」のお料理と感想を紹介させていただきます。

The menu listed the following recommendations:
■Hebesu Seiro (Tsukeseiro with hot dipping sauce and cold soba noodles): jidori chicken from Hokkaido, green onion, shimeji mushroom, hebesu (a citrus fruit from Hyuga City, Miyazaki Prefecture, with a thin skin and plenty of juice. Its gentle aroma and sourness go well with soba soup and also goes well with Sarashina soba noodles. It’s delicious right down to the last sobayu), vegetable tempura;

■(Summer only) Hiyashi tomato Seiro (seiro with chilled tomato): Soba noodles, chicken tempura, vegetable tempura, cherry tomato tempura, tomato, fried vegetables, a bite of tomato sauce, green onion, soba sauce, tempura sauce;

■(Seasonal only) Tomato Seiro (Tsukeseiro with hot dipping sauce and cold soba noodles): Soba noodles, one tomato, jidori chicken from Hokkaido, shimeji mushroom, green onion, a bite of vegetable tempura, cherry tomato tempura, a bite of tomato sauce;

■Nori Ume Oroshi Soba: Plenty of good texture hoshi (dried) seaweed and flavorful iso (rocky shore) seaweed. The grated daikon and plum make it refreshing to eat. It is a chilled bukkake style, the sauce is already poured on. It comes with vegetable tempura. For an additional fee, you can have the toppings served on a separate plate and the soba noodles served twice (at the beginning and during the meal).

The cold soba menu includes seiro (cold soba), ebiten seiro (cold soba and two shrimp and three kinds of vegetable tempura), toriten seiro (cold soba and chicken and three kinds of vegetable tempura), ikaten seiro (cold soba and squid and three kinds of vegetable tempura), gobo-oroshi (cold soba with sliced ​​burdock fries and grated daikon radish, the sauce is already poured on), hiyashi tanukitsu (shrimp-flavored agetama, deep-fried tofu, myoga ginger, green onion, seaweed, grated radish, kamaboko, bukkake-style), and koshimizu (chicken tempura, burdock and green onion kinpira, white sesame seeds, green onion, grated radish, shiso leaf, pickled burdock, bukkake-style).

The tsukesoba (cold soba noodles with hot dipping sauce) menu includes followings:
■Kashiwa Seiiro (jidori chicken from Hokkaido, green onion, shimeji mushroom, vegetable tempura);
■Fuwafuwa negiten seiro (Kashiwa Seiiro with green onion tempura);
■Torigobō Seiro (Kashiwa Seiiro with sliced ​​burdock fries);
■Donja nori Seiro (Kashiwa Seiro with wild rock seaweed from Hokkaido and sliced burdock fries);
■Kamo Seiro (duck meat and meatballs grilled with sauce, green onion, shimeji mushroom, vegetable tempura);
■Nori tororo (dried seaweed, grated yam, agetama, soup already poured over).

The hot soba noodles menu includes Kake (hot soba), Toji (two eggs are used, seaweed, spinach, kamaboko), Hanamaki (seaweed, bonito flakes, green onions, fried tempura dumplings), Tanukitsu (shrimp-flavored agetama, deep-fried tofu, myoga ginger, green onions, seaweed, grated radish, kamaboko), Kashiwa (jidori chicken from Hokkaido, shimeji mushrooms, green onions, grated radish, vegetable tempura), Kare (curry-flavored chicken soba), Torigobō (chicken and sliced ​​burdock fries), Oyako (chicken and two eggs, seaweed, spinach, kamaboko), and Kamo Nanban (duck meat and meatballs grilled with sauce, green onions, shimeji mushrooms, vegetable tempura).

There were many a la carte and rice dishes on the menu, and on the announcement whiteboard there was a menu about kamoyaki (grilled duck with sauce). In addition, you can change a half portion to Inaka Soba (limited quantity, additional charge applies): Hand-cut thin soba noodles made with flavorful Biei buckwheat flour.

The note read, “We would like you to enjoy freshly boiled soba noodles, so the “-seiro” will be served in two batches at different times.”

I ordered the Donja nori Seiro and grilled duck (with sauce). I changed a half portion of soba noodles to inaka soba.

メニューは、おすすめとして、つぎのおすすめが並んでいた。
■へべすせいろ(温かいつけ汁と冷たいおそばのつけせいろ):道産地鶏、ねぎ、しめじ、へべす(宮崎県日向市産、果皮が薄く果汁たっぷり優しい香りと酸味がそばつゆと合い更科そばとも相性バツグン、最後のそば湯まで美味しい)、野菜天 
■(夏季限定)冷やしトマトせいろ:おそば、とり天・野菜天・ミニトマト天、トマト・素揚げ野菜、ひとくち分のトマトソースつゆ、ねぎ、そばつゆ、天つゆ
■(季節限定)とまとせいろ(温かいつけ汁と冷たいおそばのつけせいろ):おそば、トマト1個分・道産地鶏・しめじ・ねぎ、ひとくち野菜天・ミニトマト天、ひとくち分のトマトソース
■海苔梅おろし蕎麦:食感の良い干し海苔と風味の磯海苔がたっぷり。おろしと梅でさっぱり食べれます。つゆがかかった冷やしぶっかけ。野菜天付き。追加料金で具は別皿、おそばはせいろで2回出しができます。

冷たいおそばは、せいろ、えび天せいろ、とり天せいろ、いか天せいろ、ごぼうおろし、冷やしたぬきつ、こしみずが並んでいた。

冷たいおそばと温かいつけ汁のつけせいろは、かしわせいろ、ふわふわねぎ天せいろ、とりごぼうせいろ、どんじゃ海苔せいろ、鴨せいろ、のりとろろが並んでいた。

暖かいおそばは、かけ、とじ、花巻、たぬきつ、かしわ、かれー、とりごぼう、親子、鴨南蛮が並んでいた。

多数の単品とご飯のメニューが並んでおり、お知らせのホワイトボードに鴨焼き(タレ)が書いてあった。また、田舎そば(数量限定):風味豊かな美瑛産の蕎麦粉を使った手打ちの細切り田舎そばです。(要追加料金)も書いてあった。

註書きには、「そばはゆでたてを召し上がっていただきたく、「~ せいろ」は、2回に分けて時間差でお出しします。」とあった。

私は、どんじゃ海苔せいろと鴨焼き(タレ)を注文した。そばは半人前を田舎そばに変更した。

I would say “Great taste with diverse menu”.

「多彩なメニューの素晴らしいテイスト」、というところでしょう。

Access – アクセス

To get to “Teuchisoba no Taguto”, I walked from Hassamu Minami Station on the Sapporo Municipal Subway Tozai Line. After emerging above ground, I walked slowly southwest along Shinkotoni Street towards Nishino, and arrived in about 10 minutes on foot.

「手打蕎麦のたぐと」へは、札幌市営地下鉄東西線発寒南駅から歩きました。
地上に出て、新琴似通りを西野方面に南西へゆっくり歩いて、徒歩10数分で到着しました。
