Muromachi SUNABA Nihonbashi-Honten – 室町砂場 日本橋本店

Best Soba Restaurant Visit- 蕎麦屋名店訪問

One weekday morning in October, when autumn was deepening, I suddenly thought of having lunch at this highly rated restaurant, Muromachi Sunaba, Nihonbashi-Honten (Main Branch), and decided to go and line up before it opened. When I arrived 30 minutes before opening, there were already several groups waiting there, even though it was a weekday. Luckily, I was able to get in when the store opened.
I will introduce the dishes and impressions of the restaurant here.

Dishes I odered – 私が頼んだ料理

I had already decided what to order. This restaurant is said to have originated “Tenmori”. In the menu, there was also “Tenzaru” along with “Tenmori”. “Hikigurumi” (powder made by grinding whole buckwheat seeds) is used for Tenmori, and “Sarashinako” (powder made by grinding only the center part of buckwheat seeds) is used for Tenzaru. I thought about which one to choose, but as I had already decided, I chose the fragrant “Tenmori”.

”Tenmori” – 天もり

Muromachi Sunaba’s “Tenmori” is not a set of zaru soba (seiro soba) and tempura assortment, but as shown in the picture, it is a style with tempura in the dipping soup.
According to the explanation on the menu, in order to make it easier to eat tempura soba even in the hot summer, it was started by modifying the tempura soba to a tsukemen style that is served in a cold bamboo steamer.
